Homemade Pumpkin Butter


Pumpkin lovers, this recipe is delicious, simple and so versatile. Add pumpkin butter to toast, bagels, scones, oatmeal, yogurt...have I captivated you yet? Added bonus: your kitchen will smell delicious while making this!

Homemade Pumpkin Butter

(Yields about 3.5 cups)

Ingredients:

  • 1 (29 oz) can pumpkin puree
  • 3/4 cup apple juice or apple cider
  • 1 tsp. ground ginger
  • 1/2 tsp. clove
  • 1 tsp. nutmeg
  • 2 tsp. ground cinnamon
  • 1 cup white sugar
  • 1 tsp. vanilla extract
  • 1 tsp. lemon juice

Directions:
  1. Combine pumpkin, juice, spices, sugar and vanilla in a medium pot and stir well to combine
  2. Bring mixture to a boil, then reduce heat a simmer for 20 minutes or until thickened (stir frequently)
  3. Cool completely, stir in lemon juice, then store in a jar of your choice. Keep refrigerated
