Homemade Pumpkin Butter
Pumpkin lovers, this recipe is delicious, simple and so versatile. Add pumpkin butter to toast, bagels, scones, oatmeal, yogurt...have I captivated you yet? Added bonus: your kitchen will smell delicious while making this!
Homemade Pumpkin Butter
(Yields about 3.5 cups)Ingredients:
- 1 (29 oz) can pumpkin puree
- 3/4 cup apple juice or apple cider
- 1 tsp. ground ginger
- 1/2 tsp. clove
- 1 tsp. nutmeg
- 2 tsp. ground cinnamon
- 1 cup white sugar
- 1 tsp. vanilla extract
- 1 tsp. lemon juice
Directions:
- Combine pumpkin, juice, spices, sugar and vanilla in a medium pot and stir well to combine
- Bring mixture to a boil, then reduce heat a simmer for 20 minutes or until thickened (stir frequently)
- Cool completely, stir in lemon juice, then store in a jar of your choice. Keep refrigerated
