Turkey Albondigas (Meatballs)
Albondigas (ahl-bohn-dee-gahs) roughly means "meatballs" in Spanish. These meatballs are often cooked in a soup with broth andf tomato sauce. But my childhood memories were always eating them as breaded and cooked little patties, so that's how I prefer to eat them now.
I love making these because, not only are they tasty, lean and filling, but they also freeze really well!
Turkey Albondigas (Meatballs)
Yield: 7 servings (4 albondigas per serving) | Prep time: 20 minutes | Total time: 45 minutesIngredients:
- 1 pound lean ground turkey
- 1 small onion, diced
- 1 Tbsp. garlic powder
- 1 cup unseasoned breadcrumbs
- 2 Tbsp. chopped parsley
- 1 egg
- 1/4 tsp. salt
- 1/4 tsp. pepper
Directions:
- Preheat oven to 350°F.
- In a medium bowl, add 1/2 cup of breadcrumbs. Set aside.
- In a large bowl, combine turkey, onion, garlic, 1/2 cup of breadcrumbs, parsley, egg, salt and pepper. Mix and form into 1-inch balls.
- Roll balls in breadcrumbs, then flatten slightly.
- Heat a large pan over medium-high heat. Once hot, add olive oil (enough to coat the pan).
- Working in batches, add about half of the albondigas (don't over crowd the pan). Brown albondigas, about 2 minutes on each side.
- Once all albondigas are browned, place them into a baking dish, cover and bake for 7-10 minutes, or until albondigas are cooked through.

OMG these look so good! I wonder if they would be good with some kind of sauce? Any recommendations?

ReplyDeleteThanks for your question! I personally eat them just as they are because they already have great flavor. However, my significant other enjoys eating them with a vinaigrette dressing and my dad likes them with ketchup - Heinz of course :)
ReplyDeleteAnother option could be a creamy garlic dipping sauce. Try mixing plain greek yogurt (or sour cream), minced garlic, chopped parsley, lemon juice, salt and pepper.
