Red Bean and Quinoa Burger
I love veggie burgers! But I always have a difficult time making GOOD veggie burgers. Every time I make them, they end up being very crumbly. But, alas, these burgers not only stay together, but taste great! Adapted from this gluten-free recipe.
Red Bean and Quinoa Burgers
(Yields 6 burgers)Ingredients:
- 1/2 cup small red beans, cooked
- 1/4 cup quinoa, uncooked
- 1/2 cup water
- 1/2 red onion, chopped
- 3-4 carrots, chopped
- 5 garlic cloves, chopped
- 2 Tbsp. ketchup
- 2 Tbsp. salsa/bruchetta
- 1 tsp. Dijon mustard
- 1 cup whole wheat flour
- Salt and pepper to taste
Directions:
- Cook red beans according to package, set aside
- In a small pot, bring water to boil. Add quinoa, cover the pot, and reduce the heat and simmer for 15 minutes
- Keeping quinoa covered, remove pot from heat and let stand for 5 minutes
- Remove the lid and gently fluff quinoa with a fork, set aside
- Heat a pan over medium-high heat. Once hot, add small amount of olive oil (enough to coat pan)
- Cook red onion and garlic for 3-5 minutes. Add carrots and cook for another 5 minutes. Remove from heat and set aside
- Into a food processor, add cooked beans, cooked quinoa, onion/carrot mixture, ketchup, salsa and mustard. Pulse until combined
- Add flour, salt and pepper. Pulse until flour is well distributed
- Place burger mixture into a bowl and place in refrigerator for 30 minutes
- Preheat oven to 350°F. Lightly grease a cookie sheet
- Remove burger mixture from refrigerator and form into 6 patties that are 4-inches wide
- Place burgers on prepared cookie sheet and cook for 20 minutes
- Flip burgers and cook for another 15 minutes
I top my burger with a slice of Gouda cheese, tomato and lettuce. And sweet potato fries on the side...because what good burger wouldn't be accompanied by fries? Here is the meal in its entirety:

- Bunch of lettuce
- Bunch of kale
- 3 tomatoes
- 4 green peppers
- 2 eggplants
- 1 red onion
- 1 cooking onion
- Bunch of carrots
- 2 lb. bag of potatoes
