Lo Mein with Chicken, Bok Choy and Shiitake Mushrooms in a Peanut Sauce


Last time I cooked bok choy, I stir fried it with ginger and garlic and accompanied it with brown rice and teriyaki chicken. This time, I decided to make a one-dish stir fry meal.

Lo Mein with Chicken, Bok Choy and Shiitake Mushrooms in a Peanut Sauce

(Yields 5 servings)

Ingredients:
  • 6-7 oz. shiitake mushrooms, sliced
  • 1 head of bok choy, chopped
  • 2 chicken breasts
  • 1 10 oz. package of lo mein noodles (I used lo mein egg noodles)
  • 1 container of peanut sauce (I used about 6 oz.)
  • 6+ garlic cloves, minced
  • Salt and pepper, to taste

Directions:
  1. Thoroughly wash and dry bok choy, then roughly chop the leaves and stalks into 1 inch pieces
  2. Slice chicken into about 1 inch cubes
  3. Heat a pot of water. Once boiling, add lo mein noodles and cook according to package. Once cooked, strain noodles and set aside
  4. Heat wok over medium heat. Once hot, add small amount of olive oil (enough to coat pan)
  5. Add chicken, salt and pepper, and cook until chicken is fully cooked - about 6 minutes. Once cooked, remove cooked chicken to a plate
  6. Add a small amount of olive oil to wok again, and cook garlic until fragrant but not browned - about 1 minute
  7. Add shiitake mushrooms and cook for 3 minutes
  8. Add bok choy and cook until wilted - about 2 minutes
  9. Add cooked chicken and lo mein noodles to mushrooms and bok choy, stir to coat
  10. Let everything simmer for a few minutes to let sauce thicken
  11. Add remaining sauce and serve

This turned out wonderfully and was so tasty! And the best part, very little clean up!! The bok choy was very mild but added the perfect crunch of the dish.
