Creamy Cole Slaw
Cabbage is relatively mild vegetable and can be used in many ways. The way I decided to prepare my cabbage was in a cole slaw. I loosely followed this recipe from Food Network.
Creamy Cole Slaw
(Yields 4-5 servings)
Ingredients:
- 1/2 head of cabbage, finely shredded
- 1 large carrot (5-6 baby carrots), finely shredded
- 1/2 sweet onion, finely shredded
- 1/2 cup mayonnaise
- 1 Tbsp. plain Greek yogurt
- 1 Tbsp. sugar
- 1 Tbsp. white vinegar
- 1 1/2 tsp. Dijon mustard
- Salt and pepper to taste
Directions:
- Finely shred cabbage, carrot(s) and onion - set aside
- In a large bowl, whisk together remaining ingredients
- Stir shredded cabbage mixture into creamy sauce
- Refrigerate until ready to eat
Easy and delicious! Now I just have to eat all this cole slaw!!
