Creamy Cole Slaw


Cabbage is relatively mild vegetable and can be used in many ways. The way I decided to prepare my cabbage was in a cole slaw. I loosely followed this recipe from Food Network.

Creamy Cole Slaw

(Yields 4-5 servings)

Ingredients:
  • 1/2 head of cabbage, finely shredded
  • 1 large carrot (5-6 baby carrots), finely shredded
  • 1/2 sweet onion, finely shredded
  • 1/2 cup mayonnaise
  • 1 Tbsp. plain Greek yogurt
  • 1 Tbsp. sugar
  • 1 Tbsp. white vinegar
  • 1 1/2 tsp. Dijon mustard
  • Salt and pepper to taste

Directions:
  1. Finely shred cabbage, carrot(s) and onion - set aside
  2. In a large bowl, whisk together remaining ingredients
  3. Stir shredded cabbage mixture into creamy sauce
  4. Refrigerate until ready to eat

Easy and delicious! Now I just have to eat all this cole slaw!!
