Kale, White Bean and Sausage Soup


It's been cold. In fact, it's been downright freezing and I've been mostly living under a blanket...and several layers of sweaters and socks. But since I'm sure everyone is tired of hearing about the cold weather and I can't live under a blanket forever, I present to you a solution: a soul-warming, healthy, easy and quick soup! 

This soup is my absolute favorite. I love making a huge batch and freezing the extras for days when I'm feeling cold and/or don't have the to time to cook dinner. This soup is also very forgiving - you don't need to have exactly 30 oz. of beans or 5 cups of kale. Also, you can nix the sausage altogether and swap the chicken stock for vegetable for a great vegetarian dish. In the future, I'd love to try this using a Parmesan Broth in place of the stock!

Kale, White Bean and Sausage Soup

Yield: 6 servings | Prep time: 5 minutes | Total time: 30 minutes

Ingredients:
  • 1 bunch of kale, about 5 cups
  • 1 onion, chopped
  • 2-3 garlic cloves, minced
  • 30 oz. canned cannellini beans or Great Northern beans
  • 4 cups water
  • 3 cups chicken stock
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • ~9 oz. sausage sliced - I used 3 Johnsonville 3 Cheese Chicken Sausages (optional)

Directions:
  1. Remove stems from kale, then tear the kale into 1/2-inch strips.
  2. Heat a large pot over medium-high heat. Once hot, add olive oil (enough to coat the pan). Add onion and cook until softened, about 5 minutes.
  3. Add minced garlic and cook for about 30 seconds.
  4. Add water and stock and bring to a boil.
  5. Stir in beans, kale and sausage. Partially cover the pot, reduce heat and allow to simmer until kale is tender, about 20 minutes. Season with salt and pepper to taste.
  6. Ladle soup into bowls and sprinkle with grated Parmesan (if desired).

Stuffed Maple Glazed Acorn Squash


This dish embodies fall: winter squash, root vegetables, pecans, maple syrup - what could be better! This recipe is hearty, colorful and fills your home with the most wonderful aromas. Also, this can be easily transformed into a vegan dish! (adapted from this recipe)


Stuffed Maple Glazed Acorn Squash

(Yields 2 servings)

Ingredients:
  • 1 acorn squash
  • 1 tsp. maple syrup
  • 1 tsp. olive oil
  • 1/2 cup sausage (soy sausage for vegan dish) - I diced 1 Johnsonville Apple Chicken Sausage
  • 1/3 cup onion, diced
  • 2/3 cup parsnip, peeled and diced (about 1 parsnip)
  • 1/2 cup fuji or gala apple, peeled and diced
  • 1 Tbsp. sage, chopped
  • 1/2 cup packed kale, chopped
  • 1 tsp. maple syrup
  • 2 Tbsp. candied pecans
  • 2 Tbsp. dry white wine
  • Salt and pepper to taste

Directions:
  1. Preheat oven to 400°F. Mix together 1 tsp. each maple syrup and olive oil; set aside
  2. Cut squash in half lengthwise. Clean out the squash - remove all the seeds and stringy bits around the seeds (just like when you carve a pumpkin)
  3. Brush insides of squash with with maple syrup/olive oil mixture. Lay flesh side down on a greased baking sheet. Cook squash until a sharp knife can be inserted into the flesh with little resistance, about 30-40 minutes
  4. Remove from oven and use a spatula to turn over - try to keep the caramelized edges in tact (because they're so tasty)
  5. While the squash is cooking in the oven, heat a large pan oven medium high heat. Once hot, add olive oil (enough to coat the pan) and sausage. Cook sausage until browned, then remove from pan and set aside
  6. Coat pan with a little more olive oil, then add onion and parsnip. Cook for 8-10 minutes or until tender
  7. Add apples and sage, cooking for another 5 minutes or until tender
  8. Add kale, candied pecans, white wine and 1 tsp. maple syrup. Cook until for 3-5 minutes or until kale is tender
  9. Add sausage back into the mixture and season with salt and pepper
  10. Fill squash with parsnip/apple mixture and serve

Kale with Sausage and Bacon & Fork Smashed Garlic Potatoes


The weather has been oddly cool for the summer, so this warm and hearty "fall" dish was perfect!

Kale with Sausage and Bacon

(Yields 2-3 servings)

Ingredients:
  • 1 bunch of kale
  • 4-5 bacon slices, cut into 1/2 inch pieces
  • 2 sausages, cut into 1/2 inch segments (I used roasted red pepper asiago sausages)
  • 4 sprigs of thyme
  • 3 sprigs of parsley
  • 1 large onion, chopped
  • 5 garlic cloves, minced
  • Salt and pepper to taste

Directions: 
  1. Thoroughly wash and dry kale. Remove stems. Chops leaves into 1/2 inch pieces. Set aside
  2. Heat deep pan over medium-high heat. Once hot, add sliced bacon. Cook for 5 minutes. 
  3. Add sausage pieces and cook for another 3 minutes or until bacon is cooked but not crispy
  4. At this point, I had a LOT of bacon fat in the bottom on my pan. If this is the case for you: remove bacon and sausage to a plate covered with paper towel. Pour most of the bacon fat into a container and discard (leave some bacon fat in the bottom of the pan to use for the next step). Blot bacon and sausage and set aside.
  5. Put pan back onto heat and add onion. Cook for 3 minutes. Add garlic, thyme and parsley and cook 2 more minutes.
  6. Add kale, bacon and sausage. Cook about 10 minutes, until kale is wilted. Add salt and pepper to taste. 
And here is the finished product:


I also made some fork smashed potatoes to eat with the kale dish.

Fork Smashed Garlic Potatoes

(Yields 2-3 servings)

Ingredients:
  • 1/2 pound of small potatoes, washed
  • 2 garlic cloves, minced
  • 1 tsp. oregano
  • Salt and pepper to taste

Directions:
  1. Preheat oven to 400°F
  2. Bring a pot of salted water to a boil. Add potatoes with skins on and cook for about 15 minutes or until tender
  3. Remove potatoes from the water and place onto a cookie sheet brushed lightly with olive oil
  4. Smash the potatoes with a large fork (be careful, the potatoes are very hot inside!)
  5. Sprinkle with garlic, oregano, salt and pepper, then drizzle with olive oil
  6. Place cookie sheet into preheated oven and cook for 15-20 minutes or until golden and crispy

Since I don't have a potato masher, I used a fork. Unfortately, my fork was a little small and I chopped/chunked my potatoes more than I smashed them. It didn't affect the flavor, they just don't like very smashed. Here is what they looked like!
